It's been about four years now since I've had to make the switch to gluten-free. It wasn't a choice because it was trendy, but because gluten actually started making me get physically sick.
I fought against it for quite some time because it was just a little bit of nauseousness I was feeling and I'm not one to give in to such things. But then there was the day I knew I had to cut it out of my life completely.
And so, after just leaving out all breads, cakes and delicious treats for the first few years, I discovered ways to continue eating some of these delicious bread type goodies!
I follow Nicole Hunn at Gluten Free On A Shoestring, who has some super easy and delicious gluten free recipes.
These pancakes happened to come from a box ... and were delicious! ... there are lots of options out there these days. A little expensive when you buy them premade. But sometimes that's a bit easier.
